Fish 4 Ever Herring Fillets in Baltic Sauce
This herring is sustainably fished in the Atlantic Ocean off the coast of Norway and Iceland, using small sized community based fishing boats that go out at night and return in the morning. No drag nets are used because these can be up to 100km long and will kill dolphins, whales, sharks, turtles and sea birds. Factory ships are not used and the fish is not frozen either on board or on land. The herring is caught in small net sacks and only the fillet of the fish is used.

Just Wholefoods Falafel Mix
Serving suggestion - serve hot Falafel in pitta bread with a salad garnish or with a spicy vegetable stew and cous cous. Cooking instructions: empty contents of sachet into a saucepan, add 225ml (8fl oz) of cold water, one tablespoon of vegetable oil, two teaspoons of lemon juice and stir well. Bring the mixture gently to the boil, stirring constantly, reduce the heat and simmer for five minutes, with the lid on the saucepan, stirring occasionally. Remove pan from heat, leave the lid on the saucepan and when the mixture is cool shape into round balls (approximately 10). Fry the balls in a little hot oil for 3-4 minutes until brown. Serve with a sprinkling of sea salt and lemon juice, if desired.

Description: The nutmeg seed is encased in a mottled yellow, edible fruit, the approximate size and shape of a small peach. The fruit splits in half to reveal a net-like, bright red covering over the seed. This is the aril which is collected, dried and sold as mace. Under the aril is a dark shiny nut-like pit, and inside that is the oval shaped seed which is the nutmeg. Nutmegs are usually sold without the mace or hard shell. They are oval, about 25 mm (1 in) in length, lightly wrinkled and dark brown on the outside, lighter brown on the inside. Nutmeg is sold whole or ground, and is labeled as 'East Indian' or 'West Indian' indicating its source. Whole nutmeg may be coated with lime to protect against insects and fungus, though this practice is giving way to other forms of fumigation.

History: In the late 16th and early 17th centuries, the supply of Nutmeg was controlled by the Dutch, who conspired to keep prices artificially high. As a response to this, both the English and French tried to obtain fertile seeds for transplantation to other regions, but where thwarted when the Dutch brought in the practice of dipping whole nutmegs in lime to prevent their sprouting.

Description: Pepper is the dried berry of Piper nigrum. This vine which can grow up to ten feet tall is indigenous to India and Asia. Pepper is actually berries that are picked about nine months after flowering. (This is true pepper, and should not be confused with paprika, cayenne pepper, chili pepper, red pepper, and bell pepper, which are fruits from the capiscum family.) Black pepper, the spiciest, is berries that are picked unripe. The berries used for white pepper are ripened on the vine and soaked so that their outer hulls are easily removed. Green peppercorns are immature berries which are freezedried or packed in brine for preservation.

History: Since the Roman times, pepper has been the most important spice. The cities of Alexandria, Genoa, and Venice owed their economic success to pepper. Three thousand year old Sanskrit literature mentions pepper. It was one of the earliest items traded Asia and Europe. In 1101, victorious Genovese soldiers were each given two pounds of pepper as a gift for their successful Palestinian conquest. History: Turmeric, with its brilliant yellow color, has been used as a dye, medicine, and flavoring since 600 BC. In 1280, Marco Polo described turmeric as "a vegetable with the properties of saffron, yet it is not really saffron." Indonesians used turmeric to dye their bodies as part of their wedding ritual. Turmeric has been used medicinally throughout Asia to treat stomach and liver ailments. It also was used externally, to heal sores, and as a cosmetic.

Use: A turmeric stain can be washed out with soap and water if treated quickly. History: The English word "tarragon" originates from the French word estragon or "little dragon," which is derived from the Arabic tarkhun. Some believe the herb was given this name because of its supposed ability to cure the bites of venomous reptiles, while others believe the plant was so named because of its coiled, serpent-like roots. Although alluded to briefly in the 13th century as a seasoning for vegetables, a sleep-inducing drug, and a breath sweetener, tarragon did not become well known until the 16th century.

Description: Sage is the dried leaves of the herb Salvia officinalis. The aromatic leaves are silvery gray in color. Description: Ginger is a flavouring from a tuberous root of Zingiber officinale, a plantin the ginger family. The root is often dried and ground or "crystallized" with sugar.

History: Ginger is native to India and China. It takes its name from the Sanskrit word stringa-vera, which means "with a body like a horn", as in antlers. Ginger has been important in Chinese medicine for many centuries, and is mentioned in the writings of Confucius. It is also named in the Koran, the sacred book of the Moslems, indicating it was known in Arab countries as far back as 650 A.D. Origin: Middle East. Alternative names: Chinese Parsley, Cilantro, Dizzycorn, Japanese Parsley

Description: Coriander is the seed of Coriandrum sativum, a plant in the parsley family. The seed is globular and almost round, brown to yellow red, and 1/5 inch in diameter with alternating straight and wavy ridges. The seed is generally sold dried and in this state is apt to split into halves to reveal two partially hollow hemispheres and occasionally some internal powdery matter. Coriander is available both whole and ground.

History: Coriander is probably one of the first spices used by mankind, having been known as early as 5000 BC. Sanskrit writings dating from about 1500 BC also spoke of it. In the Old Testament "manna" is described as "white like Coriander Seed." (Exodus 16:31) The Romans spread it throughout Europe and it was one of the first spices to arrive in America.

Use: Coriander is not interchangable with cilantro, although they are from the same plant. Ground coriander seed is traditional in desserts and sweet pastries as well as in curries, meat, and seafood dishes with South American, Indian, Mediterranean, and African origins. Add it to stews and marinades for a Mediterranean flavor. Try frying a few seeds with sausages to add an unusual flavour. Coriander complements chili and is included in many chilli recipes, such as harissa, the hot North African red pepper sauce. It may be added to cream or cottage cheese.

Description: Allspice is the dried berry of a tropical evergreen tree of the myrtle family, native to the West Indies and Central America. The berries have a warm pungent flavour similar to a mixture of cloves, nutmeg and cinnamon (hence the name Allspice!).

History: Christopher Columbus discovered allspice in the Caribbean. Although he was seeking pepper, he had never actually seen real pepper and he thought allspice was it. He brought it back to Spain, where it got the name "pimienta," which is Spanish for pepper (not to be confused with Pimenton, the Spanish Smoked Paprika) and indeed, its Anglicised name, "pimento", is occasionally used in the spice trade today. Before World War II, allspice was more widely used than it is today, but during the war, many trees producing allspice were cut, and production never fully recovered.

Use: Allspice is widely used in American and Caribbean cuisine, being added to both savoury and sweet dishes, and commonly used in meat gravies, ketchups, pickling mixes, pies, cakes, cookies, relishes, and preserves.

Use: Bay leaves have a woody, astringent flavour with a pleasant, slightly minty aroma, popularly used in pickling and to flavour stews, marinades, stuffing, and fish

Medicinal Properties: Bay leaves and berries have been used for their astringent, carminative, diaphoretic, digestive, diuretic, emetic and stomachic properties. The Peruvian beans come mainly from the Central de Cooperativas Agrarias Cafetaleras (COCLA). It has produced and exported washed Arabica coffee since 1967. Their coffee plantations are in the Quillabamba region in the Cuzco Department of Peru, east of the Inca City of Machu Picchu. COCLA is farmer owned including more than 7,500 producers from 23 different organisations including co-operatives, associations and grower committees - with over 25% of the membership being comprised of women. The farmers have approximately 17,000 hectares, growing exclusively Arabica coffee, with an annual production of more than 7,000 tonnes of coffee. Other sources are: San Juan del Oro, which is the oldest cooperative in Peru. Members of San Juan del Oro are based in the two valleys of Inambari and Tambopata, on the eastern side of the Andes in southern Peru (in the province of Sandia and state of Puno). Beans are aslo sourced from Unicafec, a producer association with 259 members which is based in the small town of San Ignacio in Northern Peru on the border with Ecuador. The town is dominated by the coffee trade and various multinationals, and small farmer organisations are based in the town along with the constant presence of middle men. These players create a fiercely competitive market. As a response Unicafec was founded in 2001 by smallholder producers that were interested in improving the quality of their coffee and exporting their coffee directly in order to secure better prices. Unicafec has been certified organic (OCIA) since 2003 and Fairtrade since 2005. Beans also come from CECOVASA, which was founded in 1970, when a group of Peruvian coffee farmers in the Lake Titicaca region of Peru came together to find a better way to sell their coffee. CECOVASA is comprised of eight cooperatives and was Fair Trade certified by Fairtrade Labelling Organizations International (FLO) in 1993,

Those from Mexico come from the Union de Ejidos "San Fernando", which was formed in 1984 by small-scale coffee growers in the San Fernando and Ocozocoautla municipalities of Chiapas state, Southern Mexico. It was formed with the aim of solving the financial problems of its members, marketing coffee and providing technical assistance. The organisation has 1,700 members, each producer has an average of 1.5-two hectares of land.
