Just Wholefoods Falafel Mix
Serving suggestion - serve hot Falafel in pitta bread with a salad garnish or with a spicy vegetable stew and cous cous. Cooking instructions: empty contents of sachet into a saucepan, add 225ml (8fl oz) of cold water, one tablespoon of vegetable oil, two teaspoons of lemon juice and stir well. Bring the mixture gently to the boil, stirring constantly, reduce the heat and simmer for five minutes, with the lid on the saucepan, stirring occasionally. Remove pan from heat, leave the lid on the saucepan and when the mixture is cool shape into round balls (approximately 10). Fry the balls in a little hot oil for 3-4 minutes until brown. Serve with a sprinkling of sea salt and lemon juice, if desired.

Tree Tops Farm Goldilocks
Made by Richard and Caroline Harbord from the milk of their organic herd of Jersey cows. Tree Tops Farm lies in a small valley overlooking the River Brue, some five miles from Bruton, Somerset. Goldilocks is a soft cheese, ripened in the traditional way by the action of the soft white mould which covers the mature cheese. The interior is a bright golden colour with a soft creamy texture. The taste is full and rich, similar to but stronger than brie, with subtle depths and flavours. As the cheese ripens the colour deepens, the flavour becomes stronger and the cheese begins to "run" like thick Jersey cream.

This soft cow's milk cheese is made by Richard Biddlecombe at Manor Farm in Ashmore, Dorset using his unpasteurised milk. Ripened using the traditional Camembert type moulds it derives its characteristics from the air, soil and vegetation on Cranborne Chase. The cheese ripens to maturity at about six months and develops a lovely buttery texture with a creamy taste.

Lubborn Somerset Camembert
Somerset Camembert is rich and creamy with a soft edible white rind made from pasteurised local milk. As the cheese matures the curd softens, becoming a uniform butter or straw colour and developing a fuller flavour. It is recommended serving Somerset Camembert during the week before the use by date to allow the cheese to mature. Accompany with a fruity, light-bodied red such as Beaujolais or for a more Somerset flavour, serve with cider! For a simple appetiser, grill de-rinded camembert on toast, topped with chopped roasted walnuts. Once opened, store Somerset Camembert by re-wrapping in its original wrapper and keep in the refrigerator.

Lubborn Somerset Brie
Somerset Brie is creamy with a mild, fresh flavour and a soft edible white rind. The curd is the colour of straw, as it ripens from the outside in, it becomes softer, richer and with a fuller flavour. To enjoy the Brie when it is mature, it is recommended that it is served during the week before the use by date. The cheese should be removed from the refrigerator at least an hour before serving. Accompany with a soft, fruity red wine and fresh crusty bread. For a simple way to round off a meal serve ripe Somerset Brie with fresh cherries or celery. Once opened, to store Somerset Brie, wrap in waxed or greaseproof paper and keep in the refrigerator.

Lubborn Capricorn
A small cylindrical soft pasteurised goat cheese from Somerset. It has a white rind and a melt in the mouth texture. When young it is mild and crumbly and has a slightly nutty flavour. As it ripens from the outside towards the centre, the white curd becomes softer and creamier, and develops a fuller flavour. The cheese is enjoyed at different stages of maturity, younger and firmer cheese is particularly good for crumbling into salads and for grilling. Try cutting in slices or in half, grill and accompany with caramelised onions and a rocket salad. Alternatively, for a very ripe consistency allow the cheese to mature up to the use by date. Once opened, store Capricorn in the refrigerator wrapped in waxed or greaseproof paper.
